Happy New Year everyone! The changing of the year seemed to feel especially significant this year, and here’s hoping for the best year yet!
So, how to kick off 2014? How about with a taco al pastor? If you’ve never tried them before, this year is the time. These unique tacos are not a treat to miss. To make them, pork is marinated in vinegar, spices, pineapple juice, chiles, and/or other yummy things to give it flavor and make it extra tender.
The pork is then stuck on a spit, vertically and cooked over gas or hot coals, rotisserie-style. A piece of pineapple is placed on the spit above the pork, so that its juices will slowly run down the meat, tenderizing it. (Are you feeling hungry yet?)
When you step up to buy one (or more!) of these tacos, slivers of this pork will be shaved from the spit, and placed in a tortilla. You’ll then get to add various toppings from a line-up of condiments, then grab a napkin and enjoy your treat!
Nothing like good food to bring in the New Year, and anytime you get together with friends to go to a San Felipe taco stand, it kinda feels like a party, so enjoy!
